Cabbage is a wonderful vegetable. It probably deserves the honor of being one of the least expensive, yet healthiest vegetables on earth. It is usually available year round and is used as a staple in many cultures’ cuisines. Cabbage has many health benefits. It is a cruciferous vegetable which contains compounds known as isothiocyanates and indole-3 carbinol, which have anti-cancer effects.
We are always on the lookout for new and interesting ways to cook cabbage. This one is a tasty winner! Za’atar is a blend of spices that is popular in many Middle Eastern dishes. It contains dried thyme, crushed sumac, salt, and toasted sesame seeds.
Preheat oven to 400 degrees.
Wash and pat try a head of red cabbage. Slice the head of cabbage into strips.
Line two baking sheets with foil and place cabbage on foil. Lightly spray the cabbage with oil or drizzle 1 tablespoon olive oil over cabbage on each baking sheet.
Toss the cabbage with your fingers to blend the oil.
Sprinkle the za’atar over the cabbage and roast for 20-25 minutes or until cabbage strips are tender with some slightly crispy.
Season with salt and pepper. Garnish with parsley and lemon and serve warm.
